  3. Thanks Fay! The chicken chili turned into more of a stew because I didn't add a thickening agent, but it was still good. :) Here's dinner tonight. The chicken "chili" and slow cooker poached pears for dessert:
  4. I really hope she's okay as well. I think about her a lot. She has one hell of a sense of humour!
  5. Thanks Wendy! I'm a big girl though, so 12 pounds is nothing compared to the losses on The Biggest Loser. :P Although, I don't think losing 24-30 pounds in a week is healthy at all. I think they work out 8 hours a day. I just made some diet adjustments and have been working my butt off for at least an hour every night. Seems to be working, so no crazy diets for me! Thanks Chrispy! Here's what I'm having for dinner tonight. Never made this before, so I have no idea how well it will turn out. Fingers crossed. I'm making chicken chili:
  6. Yup, 12 pounds in one week! I haven't been starving myself either (there are pictures to prove it, lol). I have just made healthier choices all week and exercised every day.
  7. The pumpkin cheesecake sounds delicious and so does your crust. I think you should go that route. Post lots of pictures! I'm fairly new to rice pasta, so I don't really have any tips yet. I agree though -- rice pasta was NOT made for microwaves. I too only make enough for one serving, just so I don't have to reheat. I'm still not completely sold on the taste yet, but last night's dinner was pretty good. I think I'm starting to enjoy the pasta more. On a related note, I completely changed my eating habits this week (more veggies, eating slower) and I've lost 12 pounds!

  9. Yum Scott! Looks so good. I wish I could eat eggs. I have egg envy, lol. Steve and I went out for lunch for our 3-year anniversary tomorrow, but I knew exactly what I wanted to eat and tracked all of my calories beforehand. I had soup, a sandwich, and rice for 890 calories. No soda. I was proud of myself. For dinner, we made homemade meat sauce (garlic, pork, crushed tomatoes, vidalia onion) and brown rice fettuccine. Came to about 519 calories:
  10. 55 minutes of aerobics. Doing laundry now.

  12. Dinner tonight. So tasty and filling. Steve made pretty amazing sweet potato fries!

  14. Cooking the salmon tonight for lunch tomorrow. I woke up late because I haven't been sleeping well and wanted a quick, easy lunch without any cooking. Since Steve is not a fish person, we're having roasted sweet potatoes, pan fried chicken, and steamed broccoli/carrots tonight. I'll post a picture later. :)
