  2. this was actually a couple nights ago... I forgot to post it... Simple baked chicken with tarragon, green beans with sliced almonds sauteed in bacon drippings... and a twice baked cheddar cheese bacon and green onion potato topped off with greek yogurt... tonight will be breakfast for dinner.... will post later!
  3. Holy Crap!!! That would kill me! Literally!! lol I bet it tasted really good going down though! :) to answer your question,,,, I cant remeber the last thing I had that I shouldnt have, but I am sure it included alcohol... lol Wine Time!!!!

    This is Nucy & Ivan... (on top) Nucy, short for Nuisance is about 3 years old now, she was dropped off on our front porch when she was about 7 weeks old. (bottom of fountain) This is Ivan, he is almost 11 years old now. He was washed down to us during the flooding of hurricane ivan. this is nucy the weekend that we got her, (thats a soup bowl).... They really do love each other,, but the little one always starts up and wants to play... Poor alex... how long does she have to wear that stupid hat???
  5. It took me almost a year to lose the weight... I would lose 8 or so pounds and then nothing for 3 or so weeks?? Then all the sudden another 5 would disappear and then nothing etc. etc. I lost 55 pounds, the first 25 to 30 took me almost 8 months ( I basically gave up bread pasta potatoes and I started peddling a bike ). Then I joined a gym and started doing light weights with a personal trainer, two 30 minute sessions per week. The Weight thing was the key, I lost the next 20+ pounds in less than two months. Someone else will be able to explain it better, But working the muscles starts them burning calories and fat all day long. Its amazing because I was not even lifting alot of weight, although I did feel it. think about using some of that found money from not smoking and hiring a personal trainer for a few months.

  8. Its not necessarily about healthy meals.. its just about whats for dinner tonight. There are some really good ideas here and I gotta tell ya I cant wait to find out more about this cauliflower pizza.. post pics and recipe. I am still working on pumpkin cheese cake... last night I did a test run with the filling and instead of making a cake I filled up a bunch of custard cups. Surprisingly this morning after it set, I have a pretty good tasting cheese cake in a bowl... It could be a little sweeter, I should have used the full amount of sweetener, but was scared of making it too sweet... live and learn,,,, Today I went out and bought the spring form cake pan, So now I have to figure out a crust and make it for real.
  9. I see you are garnishing Leanna... looks tasty!!! How are you making out with the rice pastas??? I have been using them but try to only cook what I am going to eat for that meal. I find that saving leftover rice pasta sort of works if you are reheating it slowly to re-serve. The lasagna worked out really well but only if reheated in the oven, the microwave was not invented for rice pastas. I will occasionally make a cold macaroni salad but cold rice pasta salads have a 24 hour or less window of good taste and texture. Got any secrets on how you deal with rice pastas?? Humbled... that looks really good. I am going to have to make a meatloaf soon, it is good fall season food. I will do a combo of beef turkey and pork. On a less healthy note... I am now working on making a pumpkin cheesecake... My plan is to use honey and goat cheese instead of sugar and cream cheese... not sure what to do for the crust yet, but I am thinking maybe some different nuts and coconut with honey and GF oats... any ideas?? I will keep you posted
  10. So... this was breakfast/lunch today... yellow and green squash sautee with onions and cherry tomatoes left overs, turned into an omelette with greem onions and some cottage cheese and pepper jam on the side... I was stuffed for the day after this....

  12. I love liquid dinners... lol Went to the doctors yesterday... I am now headed for therapy for my shoulder and and have also added to my wardrobe a elbow support for my tennis elbow??? This will teach me not to go the doctors for a check up... lol
  13. Spaghetti squash and chicken scampi casserole... It was really good... I mixed in some mushrooms and some sun dried tomatoes into the chicken scampi and poured that over a bed of spaghetti squash and topped it off with mozzarella cheese and green onions.

  18. Thanks,,, I don't know what you call that salad but it was really good.... I forgot to mention that the avocado mix also had pesto in it. really good!! So as per my "to late to do anything about it" prediction... I now have 1 1/2 gallons of cream of broccoli soup made.... It tasted good too!! I put cheddar cheese in mine. Next time I will look at some recipes and see what other people do. To late for lunch now, So apparently this is part of what is for dinner tonight!! lol
  19. I cant find anything to eat... So I decided to clear out the fridge and to make soup.... The winner is.... cream of broccoli. I am using everything I have in the fridge that is appropriate. 6 cups of turkey stock (dug through both freezers for all available stock.. may add 2 cups of pork stock if needed) a roasting pan full of broccoli (everything I through into the freezer the past few months) I roast a 30lb turkey in this roaster.... lol almond milk, heavy cream, reg milk, half and half, ( that will wipe the dairy out of my fridge ) They are not all full... With all the other ingrediants, I think I am gonna end up with 1 1/2 gallons of soup!!!
  20. I have to do a better job taking pictures.... This was my salad the other night... sliced tomato on the bottom, then sliced avocado, then a mix of avacado and greek yogurt and topped off with Tzatziki...
  21. OK,,, best I can tell I survived the audit.... Might still get an 800.00 fine, not sure till I get to see the official closing statement. Glad that is over,,, kind of like starting with a clean slate. :) Thannks for your comments!!

  24. I have canned two kinds of pepper jam, and also beet relish so far that I will be giving out to a few of my friends and family so they have it for Thanksgiving... It is just little extras to add to a great dinner in any house... and yes the home made stuff shines in my book too!!
