October 9, 201411 yr This weekend is Thanksgiving here in Canada and I'm doing some baking! I have never made banana bread or pies, but I'm going to try. My dad actually talked to me on the phone tonight and asked if I'd bake a pie, haha. I was going to try anyway. I told him if they are a flop, I will buy some frozen pies from the grocery store. I tried my hand at banana bread and I must say, I'm pretty damn proud of myself! Although, the bread's a little crumbly, so I may try a different recipe next time and maybe cut down to half a cup of chocolate chips. Also, I used margarine instead of butter. The recipe didn't call for brown sugar, which I thought was strange? Maybe I'm wrong. I thought I'd share my adventures in baking though! More pictures to come.

October 9, 201411 yr Author He told me tonight I'll have to make another loaf. He ate about half of it tonight, lol. He's lucky to have such good metabolism! I'm thinking I will try with butter tomorrow and see what the results are. I think I needed to cook it for a little longer, but I was so worried about burning it!

When we first met and I made him dinner, I tried making "stir-fry." He ate and pretended he liked it... turns out he wasn't a fan. My mom was an excellent baker, so I spent years watching her. She'd let me do odds and ends... rolling out dough, making cookies, etc. I don't think she trusted me enough to make a pie, lol. I found a different recipe that I'm going to try out. It's easier and has higher raters. I read some of the comments and people love the recipe, so fingers crossed. :) Happy Thanksgiving to you as well! Any big plans? It's chilly here too. I made pumpkin custard a week or so ago... I googled the recipe and got so much info that I did not know which one to use... lol Leanna, the breads look great. A friend of mine makes a gluten free banana bread but has yet to give me the recipe.
October 10, 201411 yr I will post it in the recipe thread over the weekend Scott :D I will post the crust recipe too. It is not gluten free though. I try to make my own every time I am baking pie but will admit that sometimes I use the frozen ones, especially if I have to make a lot of pies. ;)

October 18, 201411 yr I have canned two kinds of pepper jam, and also beet relish so far that I will be giving out to a few of my friends and family so they have it for Thanksgiving... It is just little extras to add to a great dinner in any house... and yes the home made stuff shines in my book too!!
October 18, 201411 yr Pumpkin Pie recipe 1 sugar pumpkin 1 9 inch pie crust ... fresh or frozen (I will find the fresh recipe for you) 2 eggs 1 cup packed light brown sugar 1 tablespoon all-purpose flour 1/2 teaspoon salt 2 1/2 teaspoons pumpkin pie spice 1 can evaporated milk (12 oz) Cut pumpkin in half and remove the seeds. Place cut side down on a cookie sheet lined with lightly greased aluminum foil. Bake at 325 for about 30 to 40 minutes, or until the flesh of the pumpkin is tender when poked with a fork. Cool until it is warm. Scrape the pumpkin flesh from the peel. Mash, or puree in small batches in a blender. Increase oven temperature to 450. In a large bowl, slightly beat eggs. Add brown sugar, flour, salt, 2 cups of the pumpkin puree, pumpkin pie spice, and evaporated milk. Stir well. Pour mixture into the pie crust. Place a strip of aluminum foil around the edge of the crust to prevent over browning. Bake pie for 10 minutes at 450, then reduce the oven to 350. Bake for an additional 40 to 50 minutes, or until a toothpick inserted near the center comes out clean. Remove the strip of foil about 20 minutes before the pie is done so that the edge of the crust will be a light golden brown. Cool pie, and refrigerate overnight for best flavor.
October 19, 201411 yr I prefer cooking over baking. Cooking is more forgiving whilst changing the recipe to your liking. DD, feel free to send me a slice of your pie. I love pumpkin pie! Usually over the holidays, I bring along a trifle. The type of trifle can vary, but usually most requested is the Heath bar Trifle. Very easy to make. Not so easy on the waistline though.
