    I'm taking my own self out to dinner. The cottage fridge is empty except for condiments and pop. I kinda like dining by myself....it feels like a leisurely treat :)

Done chicken curry for 2, spag bol for the little one and just starting fajita's for me...wish my house would all eat the same thing lol.

I hang my head in shame and say tonight I had a ding meal - prawn curry I did cook spinach to go with it but I fell dirty :(

 

after shopping with my mum I had lost the will to cook  :wacko:

A roastbeef wrap & some homemade macoroni salad-they are nice here at work when they have a food event someone makes me a plate for my lunch-cool huh??? :) 

I've been cooking a batch of pinto beans since late this afternoon, they take forever. I like to put bakon and onions in mine during the last couple of hours of cooking, yum!

 

Plan to make tostadas later using my home made pico de gallo and REAL CHEESE (non of that processed cheese food stuff or cheese wiz)

Don't do that, my ex wife did that and it caused her lean tissue (muscles) to degrade and now she has permanent damage.

 

When I was still in college, I needed one more elective course to graduate and looking down the list of electives, I saw a course in nutrition for nurses. I figured that if I did not like the class, there might be some nice nurses that I could get to know LOL.

 

As it turned out, I learned how to eat right, what old wives tales were really true, and a whole lot of things about malnutrition, food poisoning, and other nasty food related stuff. I ended up enjoying the class and fell in love with the teacher LOL

 

The moral of my story is, if you enjoy taking classes at the local jr college, you might want to try a nutrition class yourself. Within six months after the class was done myself and 6 other people lost a ton of weight with what my teacher called a five step program. Learning to eat right is almost like learning how to quit smoking cigarettes.

 

Oh, and one other thing regarding food that my teacher coined in my head was:

 

re food, "variety is the spice of life", try different things, don't eat the same ole food all the time, it is not good for you.

fresh flounder, oysters, spinach, Hhhmm???  I have some shrimp in the freezer....

Not sure what to make to be honest??

La Bandita is putting together what smells like one hell of a meal!....Easter Sunday lunch. Yum yum

Ok.. it is 11:00 am here.. I am making a birthday cake for my niece in addition to making Easter Dinner...

 

this is two layers one chocolate and one vanilla with lemon... there is no salt and no sugar in the recipe...

 

this is what I got so far....

So far I have the oysers shucked and I have just finished making bread crumbs, cracker crumbs, croutons and cranberry & appple filler for the vegetable stuffing.

me I cooked slow roast lamb and all the trimmings just me mum and the little one for lunch but got 2 hungry nieces coming after they finished work later :)

Mmmmmm going to the momma's for turkey, ham, scalloped potatoes, and all the fixings.

Brunch (since my BF and I won't be cooking tonight):

 

Chicken fajita with chicken (obviously), sauted onions/bell peppers, homemade guacamole," bacon bits, salsa, snow peas, tomatoes, cheese. Not exactly healthy, but definitely delicious!

Well here is how it ended up... got to hectic to take pics..lol

 

Started with  a  6 onion cream soup served with a spoon of sour cream and garnished with green onions

 

Appetizer course..., deep fried marinated mushrooms, stuffed clams, fried cheese sticks, and oysters Rockefeller.

sauces were tarter, cocktail, or a lemon basil.

 

salad was marinated hearts of palm over sliced tomatoes and cucumbers on a bed of Romaine

 

Dinner... Center cut pork chops with a cranberry apple vegetable stuffing,,,  glazed honey carrots sauteed with orange liquour...

steamed asparagus with butter and light seasonings. and mashed cauliflower & plantains with horseradish and sour cream.

This is what the mashed plantains and cauliflower looked like...

the birthday cake was surprisingly pretty good for my second attempt.. The chocolate part was made with black beans and honey... 

the vanilla was made with chick peas and xyletol....  the icing was a goat cheese vanilla, and in between the two layers was a strawberry filling.

all fresh ingredients... 8" round, cut into 12 pieces. each peice is less than  100 calories..

Beautiful!!  I admire you...I just buy Sister Schubert's....do you have those in Canada?

Never heard of sister Schuberts.....we do have a frozen rolls that can be popped in the oven.

I love making bread......makes the house smell good and makes me feel all Martha Stewart-y (before she went to jail)

Oh, I am sure yours are fabulous...the times I have tried to make homemade the results have been horrible...so I buy these:

I am in awe!

I am making meatloaf, cheesy mashed potatoes and corn.  I however, will be eating leftover grilled chicken atop a salad.  My salad consists of spring mix/spinach, broccoli, red onion, shredded carrots, bacos and feta cheese.  I like a garlic/asiago cheese dressing that is surprisingly not high in calories.

crisps and sweet chilli sauce :) for pudding lol

Colleen and Tracey, both sound delicious! I'm not sure what we're having yet... possibly Spanish rice? Num.
