  7. Now, I'm no expert for sure but, a Good Housekeeping recipe for Cajun Rub might be a little suspect. Here are their Ingredients from Sarge's link and some errant comments from moi. 2 tablespoon(s) paprika Get that really, really good Hungarian stuff with bite. 1 tablespoon(s) coarsely ground black pepper 1 tablespoon(s) ground cumin 1 tablespoon(s) brown sugar ???? ya don't need friggin' sugar, sugar 1 tablespoon(s) salt 2 teaspoon(s) ground coriander ??? probably good but, it better be freshly ground. 1 teaspoon(s) dried thyme MORE thyme. 1 teaspoon(s) ground red pepper (cayenne) Like Sarge says, you better be talking about TABLESPOONS, please, nice hot capsicum from your garden. :) 1/2 teaspoon(s) garlic powder 1/2 teaspoon(s) ground allspice this sounds like you're making apple pie...not cajun seasoning, cher. But, maybe good, dunno.

  20. Is cod at costco your only choice ? No Fish Monger in your town with Fresh Fish ? Friends Don't Let Friends Eat Frozen Fish (unless you caught em and froze em) If frozen, thaw. pat dry. toss in a bag with corn meal or flour and spices of choice. salt, pepper, cayenne for sure. after breading, put in fridge for a few minutes (this helps the corn meal stick) get your cast iron skillet with a lick of oil nice and hot. put the stove fan on high and Never Be Afraid of a Hot Pan. fish in psssssssst, what ? 1,2 minutes? depending on thickness. Flip. pssssssssssst. 1, 2 minutes ?, touch it with your finger and it will feel firm. Try to not over cook. Remove them to a platter. In your hot skillet with a spatula ready squish a lemon or maybe some capers...sizzle sizzle sizzle. Pour over fish on platter. Done.
