shiitake mushroom

(They are a particular type of fern picked early in the spring growing season just before it unfurls - thereby the name "fiddleheads" . Popularized in Atlantic Canada, New Brunswick in particular I believe. Sauteed in butter with a dash of pepper and pinch of salt, they are pretty yummy :) )
