August 29, 20242 yr Gday Sundays Father’s Day. Im getting a vibe with all this bacon wrap. The sons are cooking the mid day BBQ. Me, I’m encouraged to do some “devils on horseback” A little bit different. Pitted prunes with blue vein cheese and cream cheese inside. Wrapped in bacon cooked on charcoal. A bit of banksia nut for that Aussie bush flavours. Recon I pull this off
August 29, 20242 yr Yeah, that sounds interesting! Looking forward to seeing the final product! Possibly the only way to make prunes something one would look forward to eating 😆
August 29, 20242 yr Took the kid (now 18!) To the pub for trivia...one of the possible answers was bacon... says the kid "pick aconite mum, the answer is always bacon.".... she wasn't wrong, of 3 questions where bacon was a possible answer it was every time.

September 1, 20242 yr Gday Got of too a rocky start. The blue vein cheese was off…. Yes blue vein can spoil. Had to pivot and use goats cheese. So prunes filled with goats cheese wrapped in streaky bacon smoked on the grill with banksia nut. How did they go. Very well they were knocking them off the grill when I turned my back so I recon that’s a compliment!

September 13, 20241 yr Wonton soup…. in the nth clims and in the south we are at that time of the year when some weeks are hot and some are cold. Good to have a quik soup to fill in those cold gapes. First some frozen veg into some water and zap for 10 mins in the microwave. 1.5 litres water in a pot on the stove add enough vegetable stock powder or chicken or what you have. Couple of tablespoons soy sauce (all low salt in this house). Teaspoon crushed garlic and ginger. 1/2 teaspoon of sesame oil. Bring to the simmer. dump in the drained veg and a frozen bag of wontons. Which ones you ask? Any ones will do. Put on a lid wait for 20 mins or so and the wontons will raise to the surface. Test one for “donnese” cause that’s what you do as the cook! Serve and enjoy….. Cant beat the sound of a spoon on the edge of a pottery bowl can you. Don’t burn your lips enjoy Edited September 13, 20241 yr by Cbdave
March 5, 20251 yr Where are all my Cooking Train riders that post their food?😀 @Cbdave @notsmokinjo @Reciprocity and others....let's open up this thread again and post our foodie pics!! March 6, 20251 yr Just finished my Eggs Benedict or I'd have taken a shot & posted it. It was yummy!🙂
March 6, 20251 yr Tonight I am making a Yellow tomato marinara sauce. I first saw it made by Lidia Bastianich on a youtube video. I have been looking all over for canned yellow tomatoes but didn't find them until the other day when my store finally started to carry them. They are supposed to be less acidic than the red tomatoes. I will let you know how it comes out.
March 6, 20251 yr Gday Some frozen raw prawns I had in the freezer. Simply a white sauce made up with both milk and vegetable stock. Two magic ingedients. First…… the brine off a small tin of tuna. ( the rest will be the dogs dinner she loves tuna) it’s your fish stock! Secound ….. a 16th teaspoon of curry powder. And I mean the tinyest bit, use the handle end of the teaspoon. It will give you a creamyness without being a curry flavour. Don’t tell anyone it’s in there and they will not know. Some peas and pasta and heat till the prawns turn pink and it’s done. Sorry no fancy plate shot ( I ate the evidence) just a pot pic

Onions, garlic, ginger, carrots, yellow pepper, red pepper and tomatoes seasoned with coriander, cumin, cinnamon, turmeric and cardamom. With a swirl of coconut milk and topped with cilantro. Good comfort food. Edited March 9, 20251 yr by DenaliBlues
March 10, 20251 yr Tonight the wife fired up a full blown Turkey dinner with all the trimmings. So yummy! She cooks a great turkey, nice and moist, plus her stuffing (my mother's recipe) is to die for IMO 😋 Sorry, no pics ... forgot to take any 😬
March 10, 20251 yr That looks great @DenaliBlues and your turkey dinner sounds wonderful as well @Reciprocity Tonight I made a roast chicken. I make that a couple times a month as it's an easy dinner. Believe it or not, I really don't like to cook. 🙄 I'm a good cook, or so I have been told, but I just don't like cooking anymore. Marina etc etc Those were done on a Weber gas grill. One thing I do as part of my prep work for wings, that seems to plump them up a bit and get rid of a some of the grease prior to grilling, is as follows: 1- boil some water 2- put the wings in a pot, bowl or dish. 3 - when the water boils, pour it into the bowl that the wings are in; enough to cover the wings. 4 - let the wings sit in the water for 5 mins. 5 - empty the bowl, dry the wings off and season as desired prior to grilling. I normally just season with SPG (salt, pepper, garlic) then grill until done. I brush on some BBQ sauce toward the end of the grilling process so it doesn't burn too much. They turn out pretty good most times. Cooked but still plump and juicy meat
