I am so not a fish eater and I'm so not a cook, but was hoping that you would share some of you fish recipes with me. I am going to buy some cod at Costco, so that will be my jumping off point! Sure would appreciate any input you could give! Thanks!

Friends Don't Let Friends Eat Frozen Fish (unless you caught em and froze em) If frozen, thaw. pat dry. toss in a bag with corn meal or flour and spices of choice. salt, pepper, cayenne for sure. after breading, put in fridge for a few minutes (this helps the corn meal stick) get your cast iron skillet with a lick of oil nice and hot. put the stove fan on high and Never Be Afraid of a Hot Pan. fish in psssssssst, what ? 1,2 minutes? depending on thickness. Flip. pssssssssssst. 1, 2 minutes ?, touch it with your finger and it will feel firm. Try to not over cook. Remove them to a platter. In your hot skillet with a spatula ready squish a lemon or maybe some capers...sizzle sizzle sizzle. Pour over fish on platter. Done.

September 3, 201411 yr We love this recipe...and we buy the tilapia frozen at Sam's (sorry Sazerac, we don't live on the coast!). The only thing we do differently, is that my husband cooks it on the grill on a really hot pan in olive oil... And while I am totally disgusting Sazarac...we also like the frozen breaded flounder from Sam's because it is so easy..we just pop two pieces in the toaster oven, and serve with baked sweet potato fries and a salad...

If I purchase from local supermarket, sometimes it is good, and other times very fishy. Your recipe is like we cook when we are in Destin...yummy!

It's expensive here too, nice red snapper etc. and only for a treat, alas. Although sometimes lucky and catch a guy selling out of his truck to the restaurants early in the morning. Here are their Ingredients from Sarge's link and some errant comments from moi. 2 tablespoon(s) paprika Get that really, really good Hungarian stuff with bite. 1 tablespoon(s) coarsely ground black pepper 1 tablespoon(s) ground cumin 1 tablespoon(s) brown sugar ???? ya don't need friggin' sugar, sugar 1 tablespoon(s) salt 2 teaspoon(s) ground coriander ??? probably good but, it better be freshly ground. 1 teaspoon(s) dried thyme MORE thyme. 1 teaspoon(s) ground red pepper (cayenne) Like Sarge says, you better be talking about TABLESPOONS, please, nice hot capsicum from your garden. :) 1/2 teaspoon(s) garlic powder 1/2 teaspoon(s) ground allspice this sounds like you're making apple pie...not cajun seasoning, cher. But, maybe good, dunno.

September 6, 201411 yr i agree mostly that fresh fish is the better option...but the supermarket fish is old...they bleach it to rid it of the smell and color..that's disgusting. In that case....frozen is the better option. If you find a brand you like..stick with it cause if they froze it when it was fresh and vacuum sealed it....it's the next best thing to fresh. Rule of thumb: if it smells fishy...don't eat it haha....i'm giggling about where your mind is going with that... :)
September 8, 201411 yr Author I ate the cod. It did not kill me. It was actually pretty good. I kept it simple with garlic butter croutons crumbled up on the top as a "breading" and baked it. Next will be the tilapia. We shall see!
September 15, 201411 yr If using frozen fish, always thaw before cooking. All fish, fresh or salt water, and or any seafood needs little in the spice department. I try to keep it simple with choices like... butter, lemon, white wine, parsly paprika & salt and pepper to taste. I find it better to make sauces to put on top of the fish meals after cooking,,, this way you can still taste the fish. If using a filet of fish, try greasing a pan, lay one filet on bottom then layer with things you like, for examples...spinach, mushroom and cheesetomato slices, zucchini and roasted pepperssun dried tomatoes, and rice with artichokes.Broccoli and cheese of choice etc., any combo of two or three itemsput a little butter or lemon with some seasoning on the top most filler item, then top off with a second filet and season lightly on top again.cover with foilbake at 350 for 30 to 35 minutes (remove foil top after 20 minutes.) below is blurry picture of cod filets (single serving size, froze other half) they are stuffed with shrimp, tomato, spinach and mozzarella >>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>>> The shrimp tower below I did a few months back, it was for about 20 people. Yesterday I did a similar onefor a party I was going to with about 60 people, It had about 400 pcs of shrimp on it. took me a little over 4 hours to make including making the cocktail sauce from scratch. actually in the above pic, We also had other seafood too....shrimp stuffed with crabmeatmushrooms stuffed with salmonstuffed clams,, or deviled clams (depending on where you are from )there were about 15 different appetizers all gluten corn and soy free ( no one knew the difference )NOTE: both Babs and I are close enough to the shore to find fresh fish with relative ease. I have never come home with clams that were not still in the water that morning and you can steam or roast them open and eat them,,, they dont need butter or any season at all.
