September 7, 201411 yr 10 well, I have PLENTY Lemon Basil Pesto in my freezer if you need. Bumper crop this year and it will hang around for another few months, if I'm lucky. I just love love love that stuff.
September 7, 201411 yr 9 Do you use pine nuts? I've switched to almonds cause I'm cheap. I've only made pesto twice this summer (wife is not a big fan), hadn't thought to freeze it.
September 7, 201411 yr oops 9 Hello Coleen ! Pesto freezes easily, I do it in ice cube trays and add to winter soups or mashed potatoes. It makes me very happy in dark cold winter. I hardly ever use pine nuts ($$$$) been using sunflower seeds (because they were handy) for this batch and like them very much. Have also made pesto w/out nuts at all and it is just fine. Also make pesto out of anything green. Parsley, other herbs. Arugula !!! makes a super pesto.
