I was meandering my way through this thread.....

Laughing cow cheese Huh?

I've never had it either.

But....it comes in a light version

35 calories a wedge.

Maybe cheese isn't off my list after all.....

It is really good....

PB2 sandwich

Cry inwardly while bypass the mini m&m's in freezer

2 tbsp PB2 and tiny bit of water in a bowl.  mix well.

Spread on multi grain bread that has been in fridge for quite a while and is skeptic.

 

Drag self to gym.

Oh Ava... I laughed and cried for you at the same time.

An experiment:

Turkey Chili

 

1pkg extra lean ground turkey

Can of red kidney beans (drained and rinsed)

Can of chick peas (drained and rinsed)

Can of crushed tomatoes.

(I added some home made salsa too)

Mushrooms, bell peppers, celery, onion

Clive of garlic.

Chili powder. Lots. :)

 

Fry the turkey, throw in a pot.

Fry the mushrooms, throw in the pot

Add all the canned stuff plus veggies and garlic.

Chili powder it up and simmer until your house smells good.

 

Do NOT eat the whole pot or the purpose of it being healthy is lost.

Today, instead of potatoes, I'm having baked cauliflower. :)

I cut it into florettes, sprinkled the top with pepper, a little Parmesan and some parsley.

Yum.

This is delicious nice and brown from a hot hot oven.

I douse it with olive oil before roasting.

 

Now that my oven is repaired I can make ^^^again.

Just cut up 3 apples, 1 onion, some garlic in cast iron pan,  put a yard bird on top in a hot hot oven.  Excellent. added a bit of wine halfway.

Mashed carrots and turnips is the only way to get me to eat turnips.

 

Steam carrots and turnips, then mash mix in a little salt/pepper and a bit of butter.  Turnips are a pain to cut, so I usually make a huge lot and freeze them.

Baked Apple Oatmeal

 

Cook steel cut oats until done.

Dice an apple. Sprinkle with a little brown sugar. Microwave for a minute or so until soft and the brown sugar melts. Mix into oatmeal.

Grate fresh cinnamon over oatmeal.  Add a little more brown sugar if you like.

 

1 cup cooked:  Calories: 190 Fat: 3 g  Protein 4 g  

 

I made a huge batch last night, so I'm glad it passed the kid test or I'd be eating it for 2 meals a day.
