Gday jo Whip the cream and fold it through. It’s store bought custard cause it’s a cold dish. If it’s a hot dish I really like a proper egg custard made from scratch. Next layer the mango jelly and mango pulp. A bit low tide but I’m only seeing what I need. I’ve got 2 more jelly’s and heaps of fruit.

G’day Next layer, and yes it really needs the whipped cream in the double custard. Trust me it makes the difference ( don’t tell mrs C)

G’day which wheather report .....one the optimstic one or the pessimist one? Still hard to predict the wheather. How about Darwin and cyclone Tracy in 1974 that certainly caught everyone by surprise. Lost a secound cousin and his family in that one. 5 disappeared never a trace found. C

G,day Yes every sailor looks forward to a bit of “roughers”. Talking about that “Sydney to Hobart “ boat race starts Boxing Day. You have to be a bit mad to go through the bass straight in a small boat if the wheather turns:.. Bass straight is the worst stretch of water in the world. The wheathers got all the way from Africa to pick up momentum then hits the shallow waters of the great Australian Bight so the swells get big. Then it gets funneled in between the mainland and Tasmania. I’ve been through there on the old HMAS Melbourne the aircraft carrier. Waves coming over the bow then flowing down the flight deck and over the arse end. You gotta respect nature or she’ll kill you. C

G’day Jo Got a good bit of rain and lost power for a bit but survived intact. Still a hell of a lot of folk still without power from previous night. I know it sounds crazy but I still love a good storm... C

G’day N.O.P.E visiting old family, old friends maybe some booze. It’s christmas coming fast, you’ll want your guard up. C

G’day On my shoulders falls the duty of making the triffle. I’ll have to make it on Sunday ready for transporting 800 km south on Monday. I’ve already got a container and lid to fit in the 12 volt camping fridge. First layer mini chocolate Swiss rolls in 1/2s. Stand on thier ends .3/4 cup of port wine and couple of shots of expresso coffee spoon on so the sponge rolls soak it up. Then the red jelly ( called port wine jelly in aust.) pour it over sponge so it locks in the flavours when it sets. Next ....custard made double thick then water it back down with cream.... Then a layer of mango jelly. Made a bit thicker when set push through a open weave vegvstrainer so it comes out in little uneven pieces. Mix through canned mango it actually works better than fresh. Top layers are put on just before serving and it’s strawberries in jelly chopped roughly and cream. My kids knew they were grown up when they got the bottom layer served to them ( and didn’t pull a face) Yes they’ll also be a tray of mangos and cherries..... always be too much but it’s christmas. C

G’day Never took a selfie before. Had a try tonight. Suppose I had this idea that I’d look great .....like some of those shots of my niece with the big eye shots. How do they do that? chucked most in the bin! Finally used the last one. Well... would be better with a full beard, but I’ll have to keep it short till the next OP. The Tam well why not... 6 generation Aussie Scott. That beard was ginger once.... Now it’s pretty much silver. The little wee one next door, little miss 4 is a little worried about the loss of the beard might have an impact on her presents at Christmas... Plus she’s off to New Zealand this year to be with extended family... ive promised Christmas will happen even in NZ. Just my luck someone going to tell her the truth... and she’s old enough to understand.... C

G’day try Tic Tacs, even if you get through a packet a day it’s probably not as much sugar as a carrot cake slice. 2 single tic tacs sucked to nothing consume as much time as a cig. And in that time space a crave has slithered away cause you have ignored it. Plus you get to have a packet to play with just like your old habit. Me I like the orange ones and used to love the other fruit ones they bring out from time to time. Still have a pack at all times in my truck so I get to indulge in my little addiction. My wife hates them as I was forever leaving them in my pockets, left some pretty funky stains... Keep up the writing... trust me I still need to be reminded, yes I need to maintain the rage! Hate cigs cause they are killers. Love smokers cause I was one... C
