Dulce de leche (pronounced: [ˈdulse ðe ˈletʃe]; Portuguese: doce de leite [ˈdosi dʒi ˈlejtʃi] or [ˈdose de ˈlejte]) is a confection prepared by slowly heating sweetened milk to create a product that derives its taste from the caramelization of the product, changing flavor and color. Literally translated, it means "candy of milk" or "candy [made] of milk", "milk candy", or "milk jam" in the same way that dulce de frutilla is strawberry jam. It is popular in South America, notably in Mexico, Paraguay, Peru, Argentina, Chile, Uruguay, Brazil, Colombia, Bolivia and Venezuela. The dulce de leche of El Salvador has a soft, crumbly texture, with an almost crystallized form. In Colombia and Venezuela it's known as "Arequipe". A Mexican version called cajeta is made from goat's milk. In the Dominican Republic it is made with equal parts milk and sugar with cinnamon, and the texture is more like fudge. In Puerto Rico dulce de leche is sometimes made with unsweetened coconut milk. A French version, known as confiture de lait, is very similar to the spreadable forms of dulce de leche. The Norwegian HaPå spread is a commercial variant that is thicker and less sweet. The name is an abbreviation of "Hamar" where it originally was made and "Pålegg"(spread). "Ha på" literally means "put on" as a reference to putting it on a slice of bread. HaPå originated during the Second World War when, due to the scarcity of supplies, housewives would boil Viking-melk (a type of condensed milk) to a very similar type of spread. Some rambling derived from watching relapses........
One would think, with the wish and desire to be free of cigarettes, healthier, different, better, more recovered, free from mental anguish and crippling fear and needling ego, that I would be eager to change. You would think. And I am. But what I think is change and what is really change are sometimes two different things. Yes, I want to change... yet how often is it that what I really want is a different result -- absolutely! -- but from my same, comfortable process? Or yes, I want to change, but on my time table..... which is not a very realistic one. And if it doesn't happen in the time I decree, then I give up. Not with a big, dramatic temper tantrum.....so easy to clock for what it is....oh no, the much sneakier (and in its own way sicker) slow fade back to same old same old. Or yes, I want to change... but what I really want is to feel like the kind of person who wants to change, I want to look like the kind of person who wants to change... I want to look like the kind of person who is working to change... but I really don't want to change. I'm just posing. The real challenge for me today is to be deeply willing to be different, and by deeply I mean in my secret heart, not on the surface where it's all the Miss SoberJulie Show.... for myself more than anyone else, actually. As many wiser than I have observed, it's not the change that's painful, it's the resistance to change that is painful. I always thought that was about external changes thrust upon me...and certainly, it applies... but lately I've come to see how with help it is I who can be my own catalyst for real, substantive change in my outlook and behavior... and it is also I who can be my own saboteur, my own stumbling block... my own jailer. I don't smoke (and for myself, drink or drug) one day at a time, and that is enough powerful transformation for any one addict/drunk/junkie to experience. But to settle for that alone, as I stay clean and sober and free of disastrous substances like nicotine, day by day, is throwing the gift back, I believe. Some days this kind of thinking does indeed qualify as being too tough on myself. But other days, if I'm not ruthlessly honest about these things, I'm just living in the bullshit.

Relapses and my problem
My problem with relapses: (of any kind! Smoking, drinking, drugs) I 'know' it going to be a part of some people's journey. I get that. But I have to bite my tongue and restrain my fingers when the same people show up, time after time after time and do the same thing, leading to yet another relapse. They dont learn from the previous relapse, they continue to do it their own way, even when well meaning people try to help. My dad (in recovery for 36yrs) tells me "Well Julie, for the hour they are in a meeting, they 'want' to be sober/clean" I suppose the same is true for here. I have trouble finding empathy for chronic relapsers who do the same thing over and over. That's my issue, not theirs though.

Anna, that's amazing. You don't ever have to go through another 'hell week' again if you just remember SNOT :) (Smoking is Not an Option Today) You are a non smoker! :)
