Hhhmmmm.... I seem to have lost the out of the oven pic.. I will look for it...

 

Tonight was chicken fried steak, with the bacon rue white sauce.... made plantain and cauliflower pancakes and also had sauteed mushrooms and onions... very filling and very good

    I'm taking my own self out to dinner. The cottage fridge is empty except for condiments and pop. I kinda like dining by myself....it feels like a leisurely treat :)

Chicken breast, broccoli, and white rice. Boring! But I had a bunch of 'pop chips' after and they were quite good.

the dinner sounds great to me... but what is "pop chips" ???

Pop chips are nummy.

 

We ordered pizza because we helped friends move for 8 hours!

Tonight I am going to have chicken breast stuffed with the vegetable stuffing from the turkey. and am going to make an apple bacon gravy for it.  maybe a baked potato and broccoli for a veggie. Thats what I am thinking right now... we will see what I end up with...

Yesterday I made stir fry with rice noodles, beef and broccoli in a ginger sauce.  Love ginger these days! 

Large pasta shells stuffed with a mixture of ricotta cheese, spinach and mushrooms. Topped with a cream sauce and seasoned bread crumbs and baked. So yum, but messy and time consuming to make so we don't have it often.

Will have mixed green salad and italian bread on the side :)

Sounds like heartburn Hell, but yum!

I ran out of eggs so no lasagna last night but the sauce and meatballs came out magnifico!

 

And not heartburn LOL

Last night, we had B.L.T's.  I, of course, just had a B.L., I don't like raw tomatoes.  Tonight, St. Louis style ribs charred on the grill, then slow cooked in the oven for a few hours, corn on the cob and something else, I am not sure yet.

I could live with that and some nice bread to dip in the sauce.  There is always the meatball sandwich...

I'm not a big fan of lasagna. I don't know why... maybe it's because my mom used to make it a lot for my little brother?

 

But the meatballs and sauce is making me salivate! Lol.

Tonight, I'm cooking 3 slabs of St. Louis ribs like Colleen, but I slow cook mine in the oven first then barbecue them last.

 

OK Colleen, it's rib cook off time, we'll have to see who's ribs the members like best LOL

My famous Mexican Bean soup and cornbread! 

I want to make your famous mexican bean soup!  Recipe, please?

I havent stopped thinking of turkey since Scott posted pics of his the other day.

I bought some turkey pieces at the butchers, threw them in a pan with some potatoes, carrots, onions and celery.....seasoned them good.......yum, the house is smelling delicious!!

1 lbs Pinto Beans

1/2 lbs Bacon

1 green Pepper diced

2 med Onions diced

1 Jalapeno diced with a few seeds (you can add more later)

2 garlic gloves minced

1 cup cilantro chopped

6 cups low sodium broth (I use beef or make my own with beef cubes)

 

Rinse Beans, cover in water and bring to a boil. Turn off heat and lets soak over night.

Fry Bacon in skillet and cool it on paper. KEEP the Bacon grease!

Add chopped peppers, onions, garlic and cilantro to the Bacon grease and saute!

 

Add all ingredients to be beans and lets simmer until beans are soft!

Add more water if needed and beef cubes to taste!

Salt and Pepper to taste!

 

It's a recipe from a Mexican Restaurant. They served a small cup of their soup before each meal. The owner past away and the sold the restaurant. I begged the chef for the recipe and he gave it to me after numerous Tequilas :-)
