Tripas, in Mexican cuisine (known as chitterlings in English-speaking countries), are the small intestines of farm animals that have been cleaned, boiled and grilled. Tripas are used as filling for tacos, and then dressed with condiments such as cilantro, chopped onions, and chile sauce. They are also served with pico de gallo and guacamole.

I just checked out your link. I'd never heard of it before but count me.

 

Do they have their own style of BBQ sauce as well like southern bbq and carolina bbq sauces?

It's more dry rubs for that style of b.b.q. Do you have pits like ours over there?

I think the dry rubs and vinegar based BBQ sauces are the best, how about you?

I don't eat anything with vinegar in it unless you can hide it really good?

Yes, most of them. How about you?

I've had quite few like deer, rabbit, elk, ostrich, wild turkey and wild boar.

I can't offhand think of one I've not tried do you have one?

I would like to try caribou or shark, have you tried either of those?
