Help me plan dinner

Usually, I roast carrots and potatoes with a sliced onion.  I've been thinking about stuffing lately.  My son doesn't like stuffing so, I boiled him some red potatoes and steamed some baby carrots.  I did make stuffing, I made homemade stuffing in the oven...to be honest, I like the boxed stuff better :)

Colleen, I love your comfort food pictures. I voted for roasted potatoes, but honestly, I probably would have made both, hehe.

oh dear now i just feel real greedy, we had pie, sweet potato mash, green beans, cream corn, stuffing and carrots followed by home made banana cake  :unsure:

 

I like the box stuffing too but i add butter and water and bake it in the oven so it gets a crispy top, I dont like it all stodgy :(

Oh my, yes! When I say "stuffing" I mean I make the whole thing from scratch. I do buy the seasoned bread cubes but then I add diced sauteed celery and onions and cooked Italian sausage and sage and thyme and salt and pepper. I moisten with cream of chicken soup or with chicken broth and then bake it for an hour until the top gets browned and crunchy. Then I serve it with chicken gravy seasoned with soy sauce and curry powder.

 

THAT's the stuffing we like better than we like potatoes.  :) Stove top stuffing right out of the box? Probably not so much.
